Wonky Salsa Ingredients:
• 12 plum tomatoes, cut in half
• 3 white onions, cut in quarters.
• 1 head of garlic
• 2-3 chilies
• 2 teaspoons of salt
• 2 teaspoons of oregano
• 1 bunch of chopped fresh coriander
• Juice of one lemon (grilled)
• 1 tablespoon of honey
• Wonky vegetables as many as you want! Typically: onion tops, carrots, cabbages or green leaves, peppers, brassicas, courgettes , pumpkins, fruit, e.g. pineapple, apple, orange, lemon etc.
Method:
STEP 1: Start by chopping your wonky fruit and vegetables in half or into large chunks.
STEP 2: Place all the fruit and vegetables on the grill, cut side down.
STEP 3: Leave the vegetables in position on the grill until they are deeply blackened. Do this for both sides.
STEP 4: Take the fruit and vegetables off of the grill and remove any willing skins. Place these in a covered bowl, allowing them to cool down.
STEP 5: Once cooked, finely chop all of the charred fruit and vegetables and add the remaining ingredients.
STEP 6: Finally, pound the mixture to a salsa consistency and prepare to serve.
