Broccoli stalks – officially the most underused, the most wasted, the most underrated part of the vegetable out there. We mean proper whole pieces of broccoli with the thick, long stems -the kind you’d hold and sing into when you were a kid as if it were a microphone. And in this incredible recipe, broccoli stalks have never tasted this good. It’s a vegetarian dish with a story, and a (much) more healthy option than nipping into town for a Big Mac.

Broccoli Stalk Burgers Ingredients:

• 3 Broccoli stalks grated
• 1 Red onion
• 1 green chilli, deseeded and very finely chopped
• 3cm fresh ginger, diced
• Juice & zest of lemon
• Pinch of Salt and pepper
• 100g gram flour (chickpea flour)
• ½ tsp baking powder
• ½ tsp turmeric
• ½ small bunch Coriander
• A little vegetable oil for frying
• Apple-cider vinegar
• Burger buns, and salad for garnishing

Method:

STEP 1: Peel the woody outside of the broccoli stalks, and discard the outside. Grate the remaining stalks into a bowl.

 

STEP 2: Add a generous pinch of salt and mix in the sliced red onion, green chilli, fresh ginger, lemon juice and lemon zest, salt and pepper. Leave for 5 minutes to macerate.

 

STEP 3: Add gram flour, baking powder, and turmeric. Mix until it turns into a batter that starts to bind together.

 

STEP 4: Divide the mixture into 3 and fry in a little oil, until golden on both sides. Grill some more slices of red onion, basting in a little apple-cider.

 

STEP 5: Serve in your favourite buns with your favourite sauces & salads.
