Beer Can Chicken

Easy Meal for Family of 4

BBQing a social event; as the chef, you should have time to mix with the guests. Matt Hoggard of Hoggy’s Grill School demonstrates an easy to follow meal for the family, giving you time to enjoy a beer and mingle with friends.

‘Don’t waste the beer’

Ingredients: whole chicken, can of beer, potatoes, asparagus, mushrooms, corn on the cob, butter for the corn, salt and olive oil.

Set the temperature at 220ºC, with the side burners on high and the centre two burners on low, so there is no direct heat in the centre. Drizzle olive oil over the top of the potatoes, with a sprinkling of salt. Pour half of the beer from the can into a glass, as you only need half a can. Place the can in the centre of the potatoes. Take the chicken and apply honey BBQ rub on both sides of the chicken. Place the cavity over the beer can. Put the chicken and the potatoes into the BBQ. Once the chicken reaches 72ºC you can take it out and let it rest. Add the veggies to the BBQ, asparagus over a high heat, tomatoes and mushrooms over a low heat and the buttered corn over the flames. Once cooked remove from the heat and share.
