It’s a calm, still and crisp Autumn afternoon in October. The sun is setting, the atmosphere is fantastic, and we are chatting to Tristan Welch by the warmth of the fire.
Parker’s Piece in the centre of Cambridge is a fascinating place to be; bikes whizz past, and society hurries along minding its own business. And yet bang in the middle of such bustle, a Grillo kitchen is calmly placed outside Tristan’s restaurant: Parker’s Tavern. As he warms up, Tristan clicks his tongs and observes “this is outdoor cooking at a whole new level!”

“So these are outdoor kitchens, and this is outdoor cookery. And this is what it’s all about really… having space to prepare and cook and serve your food in a wonderful, beautiful environment. The kitchen has sections of wood finishes as well for that natural warmth, which I really like.
As you know, I’ve been cooking outside ever since lockdown, and we’re here on Parker’s Piece once again, to test run this fantastic outdoor kitchen by Grillo. It looks sturdy, and it looks like, to be honest, it can weather the wildest of parties, or the worst of the British weather… which is what you really need, right?! Cooking outdoors, with a glass of wine or a beer in hand – it doesn’t get better.
I’m very excited about this – it’s called the Chef’s Anvil. It’s all about fire, and togetherness, and communal cooking. And I know why they’ve put Chef in the name – it’s ingenious actually… and I know why they’ve called it an Anvil – it’s just that heart of the kitchen, it’s the centrepiece of any outdoor space. It’s quite basic, but quite technical at the same time – very thoughtful. I can’t wait to get cooking on it!”

Tristan Welch is an award winning chef, who has trained with Gary Rhodes, Michel Roux Jr and Gordon Ramsay to name but a few. He worked his way up the food chain at top restaurants in London and Paris, including Le Gavroche and L’Arpège, before spending three years working in the Caribbean.
Now returned to Cambridge, Tristan’s new series Rubbish Cooks has gained a massive following.
